We are staying in Orlando for Christmas this year, and I had 2 questions that I could use some help with.
1. Is Sea World as crazy crowded the week of, specifically 3 days before christmas, as the other parks.
2. Would you recommend the dine with shamu experience?

Yes, and Yes. The park will be crowded and dining with Shamu is a great experience.

I've done the Dine on Shamu Experience. It lasted about an hour. The atmosphere was great. The meat was a bit cow-ish, but with a well-done texture even though roasted medium.

Like others have said yes it will busy and I highly recommend Dine with Shamu as well. Depending on what you like to do Santa's Fireside Feast will be going on during your dates and has some amazing food and its a fun festive atmosphere I recommend as well. Christmas is a beautiful time to visit the park
