Avoid MLK weekend, as the parks are very busy. Late January is a low crowd time and a good time to visit, though parks close earlier, some attractions are closed for refurb (Splash Mtn.) and weather can be chilly. But those negatives aren't stopping us from arriving on January 29! :)

We go every year late Jan. last year was rather chilly and damp, but it still beat the weather up north. Crowds are very low, but Kali and Splash are usually closed. (if they only do the short refurb this year I may be able to hit splash on it's first day reopened as we are there Jan 22nd- Feb 1st)

Your chosen dates should yield decent post-holiday crowds. It seems that every year is different lately, but the crowds should be tolerable. The weather is dependent on too many factors to predict at this time. The past two Winters have been fairly mild.

We go every year for MLK weekend to celebrate a birthday. It's crowded, but not insanely so. Once Marathon weekend and MLK weekend are past, the crowds are reasonable. Don't think there is a true slow time at WDW anymore.

If you are ok with avoiding anything that has water you will be fine. Crowd levels are good, but the parks close early and you will need jackets, maybe even hats! We live up North and heat bothers us more than cold, but I still prefer (late) August over January.
