I use a Tamron 28-75 Di f2.8 lens most times. (Most pro portrait photogs I know also have one of these lenses, it's quite handy)
If i want to pack light, i just keep a 50mm f1.8 on. Then my dslr can fit in a small pack. (I use a Fuji s2, which is large for a dslr)
I too have missed Fantasmic out of my handful of trips. For the April trip we just planned, I made sure to do a dinner/Fantasmic package... hopefully Ill catch it this time.
Higher ISO means more digital noise. When shooting fireworks, its almost like shooting at sun.
You dont need a really high ISO. 200 or 400 will be fine.

Wouldnt someone being a pro also have an unfair advantage in these contests? Or someone with more experience than a beginner have an unfair advantage over the beginner?
