Not sure exactly what you mean.

You can only book fastpasses for the number of days you have tickets for. If you are staying for 10 days but have have 7-day tickets, you can only book 7 days worth of fps.

And I know there are limits for AP holders, just not sure what they are (something like 7 days per month).

AP holders can only have 7 days at one time. (That may be different if you're staying on-site for more than 7 days)

Once you use up your first day on your trip, you can then book a new 7th day later in your trip.
